Garlicky Spinach and Mushroom Pasta
(My camera has been getting suckier and suckier at picture quality, but here's a lame pic.)
Ingredients:
3 cups baby spinach (0 points)
1 small container mushrooms, any variety (0 points)
1 cup fat free chicken broth (0 points)
2-3 garlic cloves, minced (0 points)
shredded parmesan cheese, 2 tbsp (1 point)
Barilla Plus Farfalle, 1 serving (4 points)
black pepper to taste (0 points)
Directions:
Place spinach, mushrooms and garlic in a saucepan and cover with chicken broth. Add as much black pepper as desired. Heat to a boil, stirring frequently and then once boiling, turn down on low and simmer. Continue to stir occasionally while you heat the water to boil noodles. Cook pasta per package directions. Once finished, strain the pasta and top with the veggies. (I like to pour a little of the leftover "sauce" from the chicken broth on top as well). Top with 2 tbsp shredded parmesan cheese. Voila! A 5 point, very indulgent-tasting, but simple pasta dinner. If you have the points, I think a crisp, summery tasting white wine would be great with this!

That sounds so good! Well, minus the shrooms. :D
Glam, the original recipe didn't call for shrooms. I've had it both ways and it's delish either way you want it. I just like to add the extra veggies for more "bulk". You could substitute anything, really. Or just add extra spinach!
