Mock Guac

*Note: This is a double batch, added into the WW Recipe Builder. A serving is 1/2 cup. Makes a great "heavy" snack or light lunch paired with some 3 point blue corn chips.

Ingredients

  • 20 oz Green Giant Sweet Peas, Frozen
  • 2 medium avocado
  • 2/3 cup plain fat-free yogurt
  • 2/3 cup salsa
  • 6 Tbsp fresh lime juice
  • 1/2 cup cilantro
  • 1 tsp table salt
  • 1 tsp black pepper
  • 3 clove garlic clove(s)
Just whip all this together in a blender or food processor. I like mine kind of chunky so I "blend" all the ingredients except for the avocado. Then I chop the avocado into bite-size pieces and stir them in. It tastes best if you can leave it in the fridge for a few hours before you dig in!
